Said to be the oldest black tea. Lapsang Souchong is a smoked tea from China's Fujian province. Lapsang tea differs from most teas in that older, more mature leaves are picked from lower down the tea bush, instead of the prized new growth and bud.
For this reason the tea is less aromatic and is coarser. Smoking these leaves delivers a tea that would be otherwise undesirable.
Laspang Souchong tea leaves are withered over pine fires then dried in hot iron pans. They are then placed in bamboo baskets and smoked over pinewood fires giving them the characteristic smoky resin flavour and aroma.
Use boiling water and brew for 3-5 minutes according to taste. Usually taken with milk, it can be taken without if brewed for a shorter time.
